What actually happens during a proper BMW service outside the dealer?

I'm kind of curious about how independent workshops handle all the computer resets and service indicators that BMWs are famous for. My 320i is due for a major service soon and I've been watching videos of people doing oil changes themselves, but the whole registration of the new oil level sensor and resetting the CBS lights looks like a hassle without the right scanner. Been looking for what people call a Top BMW Maintenance Workshop Abu Dhabi and wondering if they use genuine ISTA software or some generic clone that might miss things. Do these shops actually run full diagnostics and update the service history digitally or is it more of a "trust us, we cleared the light" situation? Also curious if they can spot upcoming issues like valve cover gasket leaks before they become serious. I don't mind paying a bit more for thoroughness, just want to understand what I'm actually getting compared to the dealership's checklist. Anyone here asked to see the diagnostic printout before and after?
